		<description>I got thes from "Recipes for Diabetics" by Billie Little (Bantam Books, available at Barnse and Noble).  It's been awhile since I tried the, but they were really good:
LU'S CHIFFON CAKE
1 tsp. salt
2 1/4 cups flour, sifted
3 tsp. baking pwoder
1/2 cup vegetable oil
4 medium eggs, separated
1/2 cup water
Non-nutritive sweetener, equivalent to 1 1/2 cups sugar
2 tsp. grated lemon rind
1 tsp. vanilla extract
1/2 tsp. cream of tartar
Preheat oven to 325 F.  Sift together salt, flour, and baking pwoder.  Beat egg yolks, add, along with oil, water, sweetener, lemon rind, and vanilla; beat until smooth.  Whip egg whites until stiff, add cream of tartar and whip until very stiff peaks form.  Fold batter into egg whites, pour into 9" tube pan, bake until done (about 1 hour).  Invert pan and cool.
CHOCOLATE CAKE
3/4 cup flour, sifted
1/4 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
3 Tbsp. unsweetened cocoa
1/4 cup cold coffee
1 medium egg
Non-nutritive sweetener equivalent to 1/2 cup sugar
1/4 cup water
1 Tbsp. vegetable oil
1 tsp. vanilla extract
Preheat oven to 350 F.  Line 8" round layer pan with paper; grease with butter.  Sift first four ingredients together, blend in cocoa and coffee.  Beat egg, sweetener, water, oil and vanilla.  Stir into dry ingredients, mix until smooth.  Pour batter into pan, cover with foil, and place in shallow pan of water.  Bake about 1/2 hour.  Remove from pan and cool on cake rack.  Cut crosswise, fill with desired filling, and frost with desired frosting.  (I always found that sugar-free Jello chocolate pudding as filling, and homemade whipped cream sweetened with a little NurtaSweet worked well).

		<description>There is no reason to make a cake with artificial sugar. the kids will notice.
You can always make an angel food cake with cool whip on top.If you make them into cupcakes, the kids can decorate them and they will have a blast.
People with diabetes can eat anything they want.It's a matter of education, portion control , exercise and medication.
Have a fun party.</description>

		<description>If his blood sugars are under control there is no reason as to why you cannot make her a normal cake. Just compensate properly and make sure you check her blood levels. The best of luck.</description>

Many give you a 'per serving' breakdown of the carb count.  You may want to try using a basic cake mix, and then searching out a recipe for icing made with something like Sweet 'n' Low or Splenda.  To balance the blood sugars you only need to take the carb count of the cake into her diet and accommodate for it, rather than try and bake a whole cake AND make icing that actually tastes good because the use of the sugar substitute in the cake is unnecessary.</description>

		<description>sugarless sponge cakes are quite nice normal recipe just leave out the sugar , fillings can be diabetic jam , or u could use carob , a choc substitute , it is yummy , cover the sponge with this , and use diabetic sweets ie choc buttons readily availabel from most top chemist shops</description>
